我家小孩最近很愛看 迪士尼卡通 料理鼠王 (英文:Ratatouille)裡面有一道很有名的普羅旺斯燉菜,其實就是一個很家常的雜菜燴,但是很健康又美味,但因為全部都是蔬菜,所以我就自己編了這個烘蛋的料理~ 的確,老公小孩都很捧場,全部吃光光!
My kids lately love watching the Disney movie “Ratatouille .” There’s a theme dish Ratatouille, which is just a bake vegetable dish with all kinds of squashes and zucchinis. It is a super healthy, yummy, and homie cuisine. It gave me the inspiration of turning it into a omelet type of dish. My husband and kids love it!!! It was a great success!

食材:5 人份
- 洋蔥 中型一顆 切成丁狀
- 時蔬 (彩椒、義大利節瓜、番茄)各一個 洗淨切丁
- 蘑菇 5~6 朵 洗淨切丁
- 蛋 5~6顆 攪拌均勻
- 牛奶 ㄧ大匙
- 鹽、義大利香料(或是普羅旺斯香料)、黑胡椒
- 起士 一大把
- 青蔥半把 洗淨 切花(細切)
作法:
- 拿個鍋子加熱入油一大匙,炒入切丁的洋蔥爆香炒軟
- 炒入洗淨切丁的蘑菇和時蔬約4~5分鐘
- 加入適量調味料 鹽、義大利香料(或是普羅旺斯香料)、黑胡椒
- 蔬菜炒軟出水之後關火
- 把水瀝掉備份(不然過多水分會讓蛋無法成型)
- 拿另一個鑄鐵鍋或有蓋平底鍋,加熱入油一大匙
- 將備份瀝水的炒蔬菜放入鍋內
- 淋上蛋和牛奶攪拌好的蛋汁在炒蔬菜上面
- 關中小火加蓋子讓蛋在爐上烘成型
- 加上一大把起士
- 上桌前灑上蔥花裝飾

Ingredient : For 5 people
- One medium onion, diced
- Veggies ( bell pepper, zucchinis, tomatoes) one each, washed, diced
- mushrooms 5~6, washed, diced
- eggs 5~6, beaten to mix
- milk 1 TB Spoon
- salt, Italian Herbs ( or Province Herbs), black pepper
- Shredded cheese a big handful
- some green onion, washed, minced
How to:
- Take a pan to heat up on stove and add a TB spoon of oil
- Saute diced onions
- put in all the diced mushrooms and veggies and stir fry for 4-5 min
- season with salt, Italian Herbs ( or Provence Herbs), black pepper for the taste
- turn off the heat when the veggies are softened
- drain exceed liquid from the veggies and set aside
- take another cast-iron pan or a regular pan with lid, heat on the stove and add a TB spoon of oil
- put in the stir-fried veggies in the pan
- then pour in the eggs/milk mixture on top of the veggies
- reduce heat to small/ medium and put on lid to let it cook till forming to omelet
- top of the omelet with a big handful of shredded cheese
- sprinkle some minced green onion before serving

剛好週末參加教會活動,很用心的姐妹準備了一盤一盤自己發的小麥草當桌上佈置,所以我領了一盤回家,然後就把家裡的香蕉,切好的鳳梨,加上水和一點柳橙汁,加入三大把的小麥草,用好厲害的 Mitavix 調理機,快速打成沒有草味的超好喝特調綠色精力湯!這一晚的晚餐也太健康了吧!一整個奶蛋素耶!好吃又對身體無負擔!

It happened that I got this plate of wheat grass from a church activity last weekend. A talented sister sported several plates of wheat grass as centerpiece on the table. After the activity, I got one home. So, I blended in some bananas, cut pineapples, water, and a splash of orange juice, and three bunches of fresh cut wheat grass into Vitamix blender. Blended it really fast less than a minute… then, we have this super yummy and healthy green fruit smooth for dinner!
