Lemon Creamy Chicken 檸檬奶油醬汁雞

上個週末單飛到洛杉磯和朋友度過一個開心的週末,不但身心靈充飽電,還從朋友家後院摘了一些新鮮的檸檬。 他們家的檸檬又大又香,所以決定來做這道好吃又方便又適合減醣的料理!

Last weekend, I had a great time meeting friends in L.A. Not only I feel rejuvenated, but also I got some good stuff from there. From my friend’s backyard, I picked some fresh lemons and brought back with me. The lemons are very fragrant and huge. I decided to utilize these gems for this easy, yummy and low carb friendly dish!

INGREDIENTS:

  • 4 boneless, Chicken breasts or chicken thighs (about 2 pounds)
  • 1 tablespoons cooking oil
  • 3 tablespoons unsalted butter
  • 1 medium Onions or 2 small shallot, finely chopped
  • 4-5 cloves fresh garlic, minced
  • 1 cup half-and-half or whole milk
  • 1/2 cup chicken broth
  • 1 pinch of Italian Seasoning
  • 1/2 teaspoons of Salt and 1/4 teaspoons of Pepper, plus more for seasoning
  • 1 Lemons, thinly sliced

材料:

  • 4片去骨雞胸肉或是雞腿肉 (大概兩磅)
  • 1大匙 沙拉油 (酪梨油是一個很好的選擇)
  • 3大匙 無鹽奶油
  • 1顆中粒洋蔥或是兩粒紅蔥頭,切細或切細片
  • 4-5 顆新鮮大蒜,去皮切碎
  • 1量杯 half and half 鮮奶油和全脂鮮奶的混合,或是直接用全脂鮮奶
  • 1/2 量杯 雞高湯
  • 1茶匙 義大利香料
  • 1/2茶匙 鹽 和 1/4茶匙 黑胡椒粉,可依口味做調整
  • 一顆大檸檬,切片備份

INSTRUCTIONS:

  1. Thoroughly dry the chicken with paper towels. Generously season all over with salt and pepper.
  2. Heat the oil in a 10-inch or larger skillet or cast-iron over medium-high until shimmering. Working in batches if needed, add the chicken and sear until deeply browned on the bottom, 6 to 7 minutes. Flip with tongs and sear the other side until browned, 6 to 7 minutes. Transfer the chicken to a plate; set aside.
  3. Reduce the heat to medium and add the butter. When melted, add the shallot, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring occasionally, until just starting to soften, about 1 minute.
  4. Stir in the half-and-half or milk and broth, making sure to scrape up any browned bits from the bottom of the pan. Bring to a boil. Reduce the heat to a simmer. Return the chicken to the pan and simmer until the sauce is thickened enough that it coats the back of a spoon and the chicken is cooked through, 3 to 4 minutes. Stir the lemon juice into the sauce. Garnish with the Italian seasoning and lemon slices and serve immediately.

作法:

  • 用餐巾紙擦乾雞肉。在雞肉上灑鹽和胡椒粉調味
  • 拿一個大的平底鍋或是10 英吋以上的鑄鐵鍋,開中大火加熱。 把調味好的雞肉放上煎鍋煎,一面大概6-7 分鐘至焦黃,翻面煎約6-7分鐘。把堅好的雞肉放在盤子上配用。
  • 把火轉小,鍋內放入奶油融化,加入切好的洋蔥或紅蔥頭、大蒜、1/4茶匙胡椒粉。拌炒均勻約一分鐘
  • 加入鮮奶油或是全脂牛奶、雞高湯。記得把鍋內沾鍋的肉屑也一起拌勻到湯汁裡,等湯汁煮滾,轉小火繼續文火煮,把雞肉放回鍋內跟醬汁一起煮約3-4分鐘。加入檸檬汁。上菜前用檸檬片還有義大利香料裝飾!

這道菜很適合配上剛煮好的白飯或是麵條或是義大利麵!但是減糖可以用生菜沙拉代替。在沙拉上擠上新鮮的檸檬汁真的是好清爽!

This dish is perfect to go with steamed rice or cooked pasta! For low carb diet, it is great to go with fresh tossed salad. With extra squeezed lemon juice on the salad, it is super refreshing!
